Sheet-Pan Quesadilla (One-Pan Dinner

This TikTok-viral sheet-pan quesadilla is a smart oven method that lets you make a large, family-size quesadilla without standing at the stove or flipping tortillas. Everything is layered in a baking tray, pressed, and baked until golden and crisp. It’s perfect for weeknight dinners, parties, or movie nights.

Ingredients
  

  • 8 large flour tortillas
  • 2 cups mozzarella cheese shredded
  • 1 cup cheddar cheese shredded
  • For the Chicken Filling
  • cups cooked chicken shredded
  • 1 small onion thinly sliced
  • 1 small bell pepper thinly sliced
  • 2 tablespoons sweet corn
  • 2 tablespoons olive oil
  • 1 teaspoon chili flakes
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • Salt to taste
  • 2 tablespoons taco sauce or pizza sauce

Method
 

  1. Preheat the oven to 200°C (400°F).
  2. Heat olive oil in a pan. Add onion and bell pepper and sauté for 2–3 minutes.
  3. Add shredded chicken, salt, black pepper, chili flakes, and paprika. Cook for 3 minutes.
  4. Mix in taco or pizza sauce and turn off the heat. Let the filling cool slightly.
  5. Lightly grease a large baking tray with oil.
  6. Place 6 tortillas around the tray with edges hanging over the sides, covering the center like petals.
  7. Place 1 tortilla flat in the center.
  8. Spread half of the cheese over the tortilla.
  9. Add the prepared filling evenly.
  10. Top with the remaining cheese.
  11. Place 1 tortilla on top.
  12. Fold the overhanging tortillas inward to seal.
  13. Place the last tortilla on top and press gently.
  14. Brush a little oil on top and place another tray or heavy plate to press.
  15. Bake for 18–20 minutes until golden and crispy.
  16. Remove the weight for the last 3 minutes for extra crispiness.
  17. Rest for 5 minutes, slice like a pizza, and serve.
