Preheat the oven to 200°C (400°F).
Heat olive oil in a pan. Add onion and bell pepper and sauté for 2–3 minutes.
Add shredded chicken, salt, black pepper, chili flakes, and paprika. Cook for 3 minutes.
Mix in taco or pizza sauce and turn off the heat. Let the filling cool slightly.
Lightly grease a large baking tray with oil.
Place 6 tortillas around the tray with edges hanging over the sides, covering the center like petals.
Place 1 tortilla flat in the center.
Spread half of the cheese over the tortilla.
Add the prepared filling evenly.
Top with the remaining cheese.
Place 1 tortilla on top.
Fold the overhanging tortillas inward to seal.
Place the last tortilla on top and press gently.
Brush a little oil on top and place another tray or heavy plate to press.
Bake for 18–20 minutes until golden and crispy.
Remove the weight for the last 3 minutes for extra crispiness.
Rest for 5 minutes, slice like a pizza, and serve.
